Breakfast Bars

Breakfast bars are usually a to-go snack. James Caleb Jackson created them at the Jackson Sanitarium in 1863. Breakfast Bars contain some great ingredients that are healthy and great to start your day. Per bar, there are 205 calories. This breakfast bar is very similar to a fruity flapjack. This recipe is suitable for vegetarians, but vegans, unfortunately, can not eat this unless the butter you use is also ideal for you.

INGREDIENTS: makes 6

  • 25g seeds (pumpkin, sunflower etc.)
  • 25g mixed dried fruit (raisins, apricots, apple etc.)
  • 70g Old Fashioned Oats
  • 12.5g Cereal of Choice
  • 50g Butter
  • 50g Golden Syrup
  • 50g Golden Caster Sugar

METHOD:

  1. Take a 20cm square cake tin, line it with baking parchment paper, and preheat the oven to 160C/140C fan/gas 3.
  2. Pour the dried fruit, seeds, cereal and oats into a bowl and mix until the ingredients are all well combined.
  3. Cook butter, golden syrup and sugar in a saucepan and stir the ingredients with a spatula. Wait until the butter has melted and the sugar has dissolved.
  4. When everything is well heated up, take the saucepan off the stove and pour the dry ingredients (dried fruit, seeds, cereal and oats) into the saucepan. Mix everything until you have one batch of breakfast bar – or should I say breakfast ball 🙂
  5. Fill the baking tin with the mixture and press down the ingredients with a spatula, firmly secure them in the tray. Ensure you have spread out the batch evenly. For 20 mins bake the bars and then wait until it is cooled completely.
  6. When the bar is ready to be cut into rectangles, cut it carefully with a knife. Store the breakfast bars in an airtight container; they last for up to 4 days!

(If there is no sign of mould or the bars aren’t stale, then feel free to keep them for a more extended time.)
