This recipe is suitable for vegetarians, but vegans, unfortunately, can not eat this unless the eggs you use are also ideal for vegans.

INGREDIENTS: 1 person

  • 4 eggs
  • 1 tsp unsalted butter
  • 1/2 Red/Green/Yellow Pepper
  • Salt
  • Pepper
  • 1 Small Red Onion
  • 2 Tomatoes
  • 1 tbsp Dill
  • 1/4 cup Water
  • 1 Jalapeño Pepper (optional)
  • Cheese of choice

METHOD:

  1. Cut the onion, peppers, tomatoes and the jalapeño pepper into small squares. Cut up the dill and place all cut up ingredients in a pan. Ensure to put butter into the pan and wait for it to melt before placing any other components in fully. Once you have fried the vegetables at a preferred amount, place them into a separate bowl.
  2. Mix the eggs, water, cut dill and a pinch of salt and pepper in another bowl and whip with a fork. When the egg is finished and mixed thoroughly, add the vegetables into the egg mixture.
  3. Now pour the egg into a frying pan and fry until there is no liquid left of the egg. Carefully take a spatula and scrape the edges, trying not to rip the omelette. Before you transfer the omelette onto a plate, rub some cheese onto the egg and wait for it to melt.
  4. Once everything is ready, transfer the omelette cautiously from the frying pan onto a plate and enjoy. For an extra bit of spice, fold the omelette in half once on the serving plate and sprinkle some chilli flakes on top.

Bon Appetite!
